Our only imported cheese, Stilton is an intense blue-veined Cheddar. Simultaneously bright and earthy, highly acidic, and packing an unforgettable level of blue cheese funk, Stilton is one of our most complex, pungent, and rewarding offerings. We like to think of it as Danish Blue’s distinguished older brother – Stilton will find a home anywhere Blue would be appropriate, be it over soups or salads, on sandwiches, or, most commonly, on its own with crackers and beer. Fun fact – Stilton has been granted a protected designation of origin by the European Commission. Only cheese produced by strict quality standards in the English counties of Derbyshire, Nottinghamshire, and Leicestershire may legally be called “Stilton.” As such, the cheese produced in the village of Stilton (Cambridgeshire) since the 1700s cannot be sold under that name!
